OCTOPUS
SALAD AND POTATOES
The octopus
salad and potatoes is a light and tasty recipe, typical of our Mediterranean
cuisine, you can serve it cool in summer and warm in winter. All accompanied by
a glass of white wine.
Ingredients
for cooking octopus
- 1 onion
- 1 Stick of
celery
- 1 carrot
- 1
Tablespoon white wine vinegar
- Laurel and
juniper
- 1 Octopus
1 kg preferably already clean
- 8 potatoes
Ingredients
for seasoning octopus salad and potatoes
- Parsley chopped
-salt and
pepper
-oil extra
virgin olive oil
-1 Clove of
garlic (to taste)
Preparation
In a large
pot bring to boil the water with carrot, celery, onion, bay leaf, vinegar and
salt. Just boil water, to soften its tentacles, dip and remove the octopus from
the boiling water for a couple of times.
Completely
immerse the octopus and cook for about 35-40 minutes, lowering the heat to low
and cover with a lid. After 25 minutes, wash the potatoes well and then boil
them in lightly salted water. At this point, remove the octopus from the pot
after checking the area and cut it into pieces about 2.3 cm. Remove the
potatoes from the pot, peel and cut into large cubes. In a bowl place your
potatoes and octopus into pieces, seasoned with olive oil, chopped parsley,
garlic (to taste), salt and pepper.
Serve the
salad of octopus and potatoes still warm or cold.
