PASTA WITH
FRESH TOMATO
Pasta with
tomato sauce is one of the warhorses of the Mediterranean cuisine. Its
simplicity makes the dish for excellence pleasing to those who want to eat well
and feel light.
Ingredients
for 4 people:
- 320 grams
of pasta
- 200 grams
of ripe tomatoes
- Half of an
onion
- A few
leaves of fresh basil
- Salt and
pepper
- 2
tablespoons extra virgin olive oil
- Parmigiano
reggiano
Preparation
To peel well
the tomatoes, blanch them first in hot water for a few minutes then cut into
cubes. Sauté a clove of garlic and chopped onion in a pan with a little oil;
When the garlic starts to brown, remove from pan and add tomatoes, a pinch of
salt and pepper and cook for about 20 minutes.
When the
tomatoes are cooked, add some fresh basil leaf. Meanwhile, in another pot,
bring to boil salt water, where you will prepare the pasta (for the cooking
time of the pasta look at its package). Drain the pasta and put it in the pan
along with the tomatoes. Sauté for about a minute and serve hot with a sprinkle
of Parmesan and a few leaves of basil.
