SPAGHETTI WITH EGGPLANT SAUCE





This first plate of pasta is particularly suitable for vegetarians or at least for all those who love to eat healthy without sacrificing taste. Let's see what you need and how to proceed with the preparation.


Ingredients for 4 people:
-350 gr of spaghetti
-1 long eggplant
-1 clove of garlic
-1 crushed red pepper to taste
-salt and pepper
-300 g tomato puree
-fresh basil
-extra virgin olive oil

Preparation

In a pan, put a bit of extra virgin olive oil and sauté a clove of garlic. Meanwhile, cut the eggplant into cubes and add it to the pan, leaving it to cook for 5 minutes; also bring together the tomato puree, salt, pepper and red pepper. Let it cook with the lid on until the pasta is ready (about 15 minutes). Combine the spaghetti sauce eggplant and stir in the fresh basil. Serve hot.
