The colorful MACARONS


The macarons are delicious French pastries also very popular in Italy. Although less common than other homemade pastries, macarons are distinguished from other sweets for sophistication and elegance, colorful and fragrant, delicate flavor, are a very welcome gift for those who love the sweet chic allure typically French. The macarons are not difficult to prepare, but part of its elegance is in the form, which must be the most perfect and roundish possible, never too large; all macarons must be equal: only changes color, depending on taste. The predominant flavor is the almond paste. Like all sweets made with almonds, also macarons are preserved very well for days without losing any of their unique taste: it is sufficient to keep them in a cool, summer, even in the fridge. The ingredients for the construction of the outer shells of macarons (so-called coques) are always the same for everyone. The deference is the color used or the addition of special ingredients such as cocoa, coffee or pistachio. The filling instead - in French ganache - change depending on your taste.
The basic ingredients for coques are:
Almond flour,
Powdered sugar,
Egg whites
 and a pinch of salt;
In chocolate macarons will also be added the cocoa powder, in those with lemon juice or filtered dye and so on.
As regards instead the greedy ganache, the basic ingredients are cream and butter. With food coloring you can play and create colorful macarons: fuchsia, blue, yellow or even orange!
